Hanania Bakery – Damascus’ Oldest Prosphora Bread Bakery

In the heart of Old Damascus, nestled in the Bab Touma district, you’ll find Hanania Bakery, the oldest and only bakery in the city dedicated to crafting traditional Prosphora bread. Owned by the Salmon brothers—Samer, Simon, and Sami—this historic bakery has been a family legacy for generations, with roots tracing back to Maaloula. Despite life’s hardships, the brothers continue to preserve their craft with unwavering dedication.

With over 400 years of history, Hanania Bakery bakes Prosphora the traditional way, using natural flavors like mastic, mahlab, and orange blossom water. This attention to detail gives their bread a distinct taste, unlike any other. Samer, with a smile full of pride, often says, “Bread doesn’t make you rich, but it keeps you from going hungry.”

The bakery is home to the first kneading machine ever introduced in Syria, a spectacle that once drew crowds eager to witness the innovation. Back in the day, women from surrounding neighborhoods, especially during Christmas and Easter, gathered at Hanania to bake their festive cakes, creating warm, communal memories. Today, the same kneading machine remains in use, a symbol of enduring tradition.

Hanania’s Prosphora bread is meticulously prepared for religious ceremonies, holidays, and church events. Known for its unique taste, shape, and Greek seal, it’s a staple for both the rich and the poor.

Despite rising costs and operational challenges, the Salmon brothers remain steadfast, fueled by passion and patience, holding onto their dream of brighter days.
